Chorizo, tomato and garlic skewers

This one’s more of a tip than a recipe. When I was racking my brains for good low carb nibble just recently I spied a jar of Brindisa garlic cloves in the fridge that were a bit neglected and a new nibble idea took shape.

Ingredients for 16 skewers

  • 16 pickled garlic cloves
  • 16 chunks of chorizo
  • 8 cherry tomatoes

Method

  1. Roast the chorizo in a hot oven until the edges just start to turn brown, then remove from the oven and allow them to cool.
  2. Slice 8 cherry tomatoes across the equator.
  3. Skewer ingredients together: 1 garlic clove, 1 chunk chorizo, 1 half tomato.

The results were particularly harmonious and got lots of appreciative comments from guests. I’ll definitely do them again.
