Lamb, pistachio and mint patties

I’m always on the lookout for delicious and economical mid-week suppers and these hit the spot – they would also work well as part of a tapas-style feast. I served them last night with some fennel and orange slaw and some tahini yoghurt laced with chillies. They also taste good cold!

Speedy smoked mackerel paté in gluten free courgette cups

That nibbly time of year is approaching when I find myself missing those little dainty ‘croustades’ that I used to buy and fill with delicious concoctions in the days before I was gluten free. I’ve been wracking my brains for an alternative and realised I could make little containers with slices of courgette.

Cauliflower, lentil and halloumi salad

This was one of those accidental salads that worked so well I felt duty bound to write it down and share it with you. Therefore, apologies for the photo because, as so often happens, it wasn’t until it was half-eaten that I realised how good it was!

Nigella’s Rainbow Room salad

As easy as it gets, this salad is healthy and satisfying. It makes a satisfying lunch all on its own, or a great accompaniment to lamb chops of cold chicken. You can beef it up with some feta cheese, if that isn’t a contradiction in terms. Choosing your oils is an art form in itself for changingContinue reading “Nigella’s Rainbow Room salad”

Almost instant vegetable curry

The latest research suggests that aspirin can reduce your risk for a range of commonly occurring cancers (as well as a number of heart problems). I’m sure many of us will be beetling off to our GPs for a recommendation. But you don’t have to rely on pills for your health – eating the rightContinue reading “Almost instant vegetable curry”

Warm and comforting cauliflower and Stilton soup

On a cold and rainy day you need something to insulate you from the inside out. This soup should fit the bill. This will make 4 portions: 2 portions to eat now and 2 to freeze. You can multiply as you need to. Take one cauliflower.
