Cauliflower must be one of the greatest Godsends for low carb dieters. It picks up flavours so well and is full of important nutrients. Classic cauliflower cheese is a bit long-winded to make so try these three variations on a theme. For a fourth option have a look at my lime pickle cauliflower recipe too.
Ingredients
- 1 large cauliflower
Dressing 1
- olive oil
- pesto
- parmesan
OR Dressing 2
- double cream
- gruyere/emmental
- mild chilli powder
OR Dressing 3
- creme fraiche
- cheddar cheese
- wholegrain mustard
Method
Steam your cauliflower until cooked to your liking then transfer it to an ovenproof dish. Combine the ingredients for the dressing of your choice (and quantity of your choice) and pour it over the cauliflower. Place the dish under a medium hot oven for 5 minutes before serving. Works well as a main course or as a side dish with chicken, fish or lamb.
I love it cold for breakfast, but I’ve always been a bit odd 😉
