My new muesli

I’m not a fan of ‘free from’ or substitute foods but sometimes I miss sitting down in the morning with a bowl of something filling and comforting – that muesli feeling. When you’ve just got back from a great holiday and it’s raining for the second morning running, you need a pick me up. This is it. It’s nothing like muesli but it hits the spot.

Ingredients

  • 1 medium courgette
  • generous knob of butter or ghee
  • 1 rasher streaky bacon, smoked or unsmoked, to taste
  • 50g cheddar cheese
  • 1 egg

Method

Slice the courgette into rounds and fry with the butter over a medium heat until starting to colour. Add the bacon, chopped into small pieces with kitchen scissors, and cook through. Crumble the cheddar over the top, stir the mixture and allow it to melt. Finally break an egg over the top and stir it all together until it’s amalgamated. Transfer to your favourite muesli bowl. You should have some crispy bits stuck to the pan to scrape on top. Then find a chair with a nice view and enjoy.

Variations

  • If you’re vegetarian you can skip the bacon.
  • Some fresh herbs help to turn it into a lunch option.
